One of my favourite Luxembourg dishes are Gromperekichelcher (potato cakes). Today I will show you how you can make them yourself.
- Four eggs
- 200 g (7 oz) flour
- 1 kg potatoes (2 lbs)
- 1 onion
- 2 garlic cloves
- Salt, pepper and other spices that you may want to add
Method (serves three):
- Shred the peeled potatoes
- In a bowl mix the eggs, shredded potatoes, onions, garlic, spices and parsley
- Stir the ingredients
- Finally add the flour to the mix. Add more flour if needed until no longer runny
Heat olive oil in a frying pan. Use two if you want to shorten the cooking time.
The patties are best when they are not too thick...
... and when eaten warm.
Some like to add applesauce but personally I'm happy to eat them as they are.
